Method
- Score and seasonCut shallow slashes in the chicken, then season with salt and a squeeze of lime.
- MarinateRub in ⅓ cup of sauce. Cover and chill for at least 4 hours, or overnight.
- RoastRoast skin-side up on a rack at 200°C / 400°F for 35 minutes.
- Glaze and charBrush on the rest of the sauce and roast 10 minutes more, until sticky and charred at the edges. Finish with spring onion.
